Ingredients

  • 1.5 cans canned chickpeas, drained and rinsed
  • ½ cup fresh parsley, chopped
  • ¼ cup fresh cilantro, chopped
  • ½ medium onion, minced
  • 3 whole garlic cloves, minced
  • ½ cup all-purpose flour
  • 1.5 teaspoon ground cumin
  • 1 teaspoon ground coriander
  • ½ teaspoon baking powder
  • ¾ teaspoon salt
  • ½ teaspoon black pepper
  • 2 cups vegetable oil for frying
  • ½ cup tahini paste
  • 3 tablespoon lemon juice, fresh
  • 1 whole garlic clove, minced
  • 3 tablespoon water
  • ¼ teaspoon salt
  • ½ cup hummus
  • 1 whole cucumber, sliced
  • 2 medium tomato, diced
  • ¼ whole red onion, thinly sliced
  • ¼ cup fresh mint leaves
  • 4 pieces warm pita bread

Instructions

    Add drained chickpeas, parsley, cilantro, onion, and garlic to a food processor.

    Pulse until the mixture resembles coarse breadcrumbs—do not puree. Transfer to a bowl.

    Stir in flour, cumin, coriander, baking powder, salt, and black pepper until combined.

    Refrigerate the mixture for 15 minutes to firm up.

    In a small bowl, whisk together tahini, lemon juice, minced garlic, and salt.

    Slowly add water while whisking until the sauce reaches a pourable consistency. Set aside.

    Heat vegetable oil in a heavy-bottomed pot to 350°F (175°C).

    Scoop the mixture into 1.5-inch balls and carefully lower into hot oil in batches.

    Fry for 3–4 minutes until golden brown and crispy on all sides.

    Remove with a slotted spoon and drain on paper towels. Keep warm.

    Arrange hummus on a serving plate and top with warm falafel.

    Arrange cucumber slices, diced tomato, red onion, and fresh mint around the falafel.

    Drizzle tahini sauce over the falafel and vegetables.
