Ingredients

  • 1 lb beef sirloin, thinly sliced
  • 1 medium onion, sliced
  • 1 large green bell pepper, sliced
  • 1 large tomato, chopped
  • 2 tsp berbere spice
  • 3 tbsp olive oil
  • 1 tsp salt
  • ½ tsp black pepper

Instructions

    Season the 1 lb beef with 1 tsp salt and 0.5 tsp black pepper. Let sit at room temperature for 15 minutes.

    Heat 2 tbsp olive oil in a large skillet over high heat. Add the beef in a single layer and sear until browned, about 3 minutes per side. Remove and set aside.

    Reduce heat to medium. Add the remaining 1 tbsp olive oil and 1 sliced onion. Cook until soft and golden, about 5 minutes.

    Add 1 sliced green bell pepper and 2 tsp berbere spice. Stir and cook until the pepper is tender-crisp, about 3 minutes.

    Add 1 chopped tomato and cook until it breaks down into a light sauce, about 2 minutes.

    Return the beef to the skillet. Toss everything together and cook until the beef is warmed through and coated, about 2 minutes. Serve hot.
