Ingredients

  • 2 cups corn kernels (fresh or thawed frozen)
  • 2 tbsp butter
  • ¼ cup mayonnaise
  • ⅓ cup cotija cheese, crumbled
  • ½ tsp chili powder
  • 2 whole corn tortillas (5 or 6 inch)

Instructions

    Heat butter in a medium skillet over medium-high until foaming, ~1 minute.

    Add corn and cook, stirring occasionally, until kernels are warm and edges turn golden, ~3 minutes.

    Remove from heat. Stir in mayo, cotija, chili powder, salt, and pepper. Taste and adjust seasoning.

    Warm tortillas in a dry skillet 15 seconds per side, then gently form each into a cup shape.
