Ingredients
- 4 cups whole milk
- 1.5 cups sugar
- ¼ teaspoon baking soda
- 1 teaspoon vanilla extract

In a large heavy-bottomed pot, combine the 4 cups whole milk, 1.5 cups sugar, and 0.25 teaspoon baking soda. Stir well to dissolve the sugar.

Place the pot over medium heat and bring to a gentle simmer, stirring occasionally, until the sugar is fully dissolved and small bubbles appear, about 5 minutes.

Reduce heat to low and continue simmering, stirring every few minutes, until the mixture turns a light golden color and thickens slightly, about 45 minutes.

Continue cooking, stirring more frequently as it thickens, until the mixture is deep amber and coats the back of a spoon, about 30-45 minutes more. The mixture should reduce by about half.

Remove from heat and stir in the 1 teaspoon vanilla extract. The mixture will be very hot and thick.

Let cool completely in the pot. It will thicken further as it cools. Transfer to a jar and store in the refrigerator for up to 2 weeks.
