Ingredients

  • 1.5 cups roasted salted pistachios
  • 4 tbsp unsalted butter
  • 2 tbsp light brown sugar
  • ¾ cup tahini
  • ¾ cup powdered sugar
  • 3 tbsp unsalted butter
  • 8 oz dark chocolate (70% cacao)
  • 1 tbsp coconut oil

    Pulse pistachios in a food processor until finely chopped but still crumbly.

    Melt butter and brown sugar together in a small saucepan over low heat, ~2 minutes.

    Mix melted butter into pistachios until evenly coated. Press firmly into an 8x8 baking pan lined with parchment.

    Refrigerate base for 15 minutes while making filling.

    Beat tahini, powdered sugar, and butter together until light and fluffy, ~3 minutes.

    Spread filling smoothly over chilled base. Refrigerate 20 minutes.

    Melt chocolate and coconut oil together in a double boiler, stirring often, until smooth.

    Pour melted chocolate over filling. Spread in an even layer using an offset spatula.

    Refrigerate until chocolate is set and firm, at least 20 minutes.
