Drunken Crab

Ingredients
- 2 whole crab
- 3 tbsp soy sauce
- 2 tbsp vegetable oil
- 4 cloves garlic
- 1 inch ginger

Clean the 2 whole crabs, remove the top shell and gills, and cut each into quarters. Pat dry with paper towels.

Heat the 2 tbsp vegetable oil in a large skillet over medium-high heat. Add the 4 minced garlic cloves and 1 inch grated ginger, stir-fry until fragrant, about 30 seconds.

Add the crab pieces in a single layer, cut-side down. Cook without stirring for 3-4 minutes until the shells turn bright red.

Pour in the 3 tbsp soy sauce and 1/4 cup water. Cover and simmer until the crab is cooked through and the sauce thickens slightly, about 5-6 minutes.

Stir to coat the crab in the sauce, then serve hot with the sauce spooned over.
