- 1 cup dosa mix
- 1.5 cups water
- 2 cups mixed vegetables (e.g., bell peppers, zucchini, carrots)
- 2 tbsp olive oil
- ½ cup coconut chutney
- ½ tsp salt

In a bowl, whisk 1 cup dosa mix with 1.5 cups water until smooth. Let the batter rest while you prepare the vegetables.

Preheat oven to 425°F. Toss 2 cups mixed vegetables with 1 tbsp olive oil and 0.5 tsp salt on a baking sheet. Roast until tender and lightly charred, about 15 minutes.

Heat a non-stick skillet over medium-high. Pour 1/4 cup batter and spread into a thin circle. Cook until edges lift and bottom is golden, about 2 minutes. Flip and cook 1 minute more.
