Ingredients
- 2 cups cooked sushi rice
- 1 can (15 oz) chickpeas, drained and rinsed
- 1 avocado, sliced
- 1 cup edamame, shelled
- 1 cup cucumber, diced
- 1 cup tomatoes, diced
- 1 cup mango, diced
- 2 tbsp sesame seeds

Divide the 2 cups cooked sushi rice between two bowls, spreading it evenly.

Top each bowl with half of the chickpeas, edamame, cucumber, tomatoes, and mango, arranging in sections.

Fan half of the sliced avocado over each bowl.

Sprinkle each bowl with 1 tbsp sesame seeds and a handful of sliced green onions.
