Ingredients

  • 1 lb large prawns (shelled and deveined)
  • 8 oz fresh egg noodles or hokkien noodles
  • 6 cups chicken or seafood stock
  • 3 tbsp soy sauce
  • 1 tbsp dark soy sauce
  • 2 tbsp fresh ginger (grated) and garlic (minced, combined)

Instructions

    Bring stock to a boil in a large pot over medium-high heat.

    Add ginger and garlic, stirring for 30 seconds until fragrant.

    Stir in soy sauce and dark soy sauce; taste and adjust seasoning.

    Add prawns and simmer until they turn opaque pink, 3–4 minutes.

    Add noodles and cook until tender, 3–5 minutes depending on thickness.

    Ladle into bowls and serve hot with extra soy sauce on the side.
