Ingredients

  • 8 oz dark chocolate (70% cacao), chopped
  • 4 oz butter
  • 4 whole eggs, separated
  • ½ cup sugar
  • ¼ tsp salt
  • 1 tbsp cocoa powder for dusting

    Preheat oven to 350°F. Line an 8-inch round cake pan with parchment.

    Melt chocolate and butter together in a heatproof bowl over simmering water, stirring until smooth.

    Remove from heat. Whisk in egg yolks one at a time until fully incorporated.

    In a separate bowl, whip egg whites with salt until soft peaks form.

    Gradually whisk sugar into the whites while beating until stiff and glossy.

    Fold half the whites into the chocolate mixture, then fold in the remaining whites gently.
