Ingredients

  • 2 fillets white fish fillets
  • 2 cups cooked rice
  • 2 cups mixed greens
  • 1 whole lime
  • 1 teaspoon chili flakes
  • 2 tablespoons vegetable oil

Instructions

    Pat the 2 fish fillets dry and brush with 1 tbsp vegetable oil. Season with salt and pepper. Heat a grill pan or skillet over medium-high heat until smoking.

    Grill the fish for 3-4 minutes per side, until opaque and flaky, with nice char marks. Remove and keep warm.

    In a small bowl, mix the juice of 1 lime, 1 tsp chili flakes, and 1 tbsp vegetable oil. Stir in a pinch of salt to make a quick sauce.

    Steam the 2 cups mixed greens in a covered pan with 2 tbsp water until bright green and tender, about 3 minutes. Drain.

    Serve the fish over 2 cups cooked rice with the greens on the side. Drizzle with the chili-lime sauce and add extra lime wedges if you like.
