Ingredients

  • 4 pieces bratwurst or pork sausages
  • 1 tbsp neutral oil
  • 1 tbsp unsalted butter
  • ½ medium onion, finely diced
  • 2 tbsp curry powder
  • 2 tbsp tomato paste
  • 4 tbsp ketchup
  • ½ cup beef or vegetable broth
  • 2 tbsp apple juice or cider
  • 1 tsp Worcestershire sauce
  • 1 pinch salt and black pepper
  • 2 servings crispy fries or bread rolls
  • 1 tbsp fresh parsley, chopped

Instructions

  1. 1

Heat oil in a large skillet over medium-high heat. Add sausages and cook for 8–10 minutes, turning occasionally, until browned and cooked through. Transfer to a cutting board and slice diagonally into bite-sized pieces.

  2. 2

In the same skillet, melt butter over medium heat. Add diced onion and sauté for 2–3 minutes until softened.

  3. 3

Stir in curry powder and tomato paste, cooking for 1 minute until fragrant.

  4. 4

Add ketchup, broth, apple juice, and Worcestershire sauce. Stir well to combine.

  5. 5

Simmer for 3–4 minutes, stirring occasionally, until sauce thickens slightly. Season with salt and pepper to taste.

  6. 6

Return sliced sausages to the skillet and gently toss to coat with curry sauce.

  7. 7

Serve over crispy fries or with bread rolls. Garnish with fresh parsley and extra curry sauce on the side.
