Ingredients

  • 2 pieces flour tortillas (10-inch)
  • ¾ cup cooked pulled pork
  • 4 slices ham, sliced
  • ½ cup Oaxaca cheese or fresh mozzarella
  • 1 piece jalapeño, sliced
  • ¼ cup onion, thinly sliced
  • 2 tablespoon cilantro, chopped
  • 2 tablespoon butter, melted
  • ¼ teaspoon salt and black pepper

Instructions

  1. 1

Warm the pulled pork in a skillet over medium heat until heated through, about 3 minutes. Season with salt and pepper.

  2. 2

Heat a large skillet or griddle over medium-high heat.

  3. 3

Brush one side of each tortilla lightly with melted butter.

  4. 4

Place one tortilla butter-side down on the hot skillet.

  5. 5

Layer half the cheese, pulled pork, ham, sliced onion, jalapeño, and cilantro on the tortilla.

  6. 6

Top with remaining cheese and place second tortilla on top, butter-side up.

  7. 7

Cook for 3-4 minutes until the bottom is golden and crispy. Carefully flip and cook the other side until golden, about 3 minutes more.

  8. 8

Transfer to a cutting board and cut in half. Serve hot with salsa, sour cream, or guacamole.
