Curry Udon

Ingredients
- 2 servings udon noodles
- 200 g beef or chicken, thinly sliced
- 1 medium onion
- 1 medium carrot
- 4 pieces Japanese curry roux
- 600 ml water
- 1 tbsp soy sauce
- 1 tbsp vegetable oil

Heat 1 tbsp vegetable oil in a large pot over medium heat. Add 1 sliced onion and 1 sliced carrot, cook until onion is translucent, about 5 minutes.

Add 200g sliced beef or chicken and cook until browned on all sides, about 3-4 minutes.

Pour in 600ml water and bring to a boil. Add 4 pieces of Japanese curry roux, stirring until melted and smooth, about 2-3 minutes.

Reduce heat to low and simmer the curry until thickened, about 10 minutes. Stir in 1 tbsp soy sauce.

Meanwhile, cook 2 servings of udon noodles according to package instructions, then drain.

Divide noodles between bowls and ladle the hot curry over them. Serve immediately.
