Ingredients
- 4 oz curry roux cubes
- 1 lb beef stew meat
- 1 large onion
- 2 medium carrot
- 4 cups water
- 4 cups cooked rice
- 2 tbsp vegetable oil
Instructions

Heat 2 tbsp vegetable oil in a large pot over medium-high. Add 1 lb beef stew meat and cook until browned on all sides, about 5 minutes.

Add 1 large sliced onion and 2 chopped carrots. Cook, stirring, until the onion is translucent, about 3 minutes.

Pour in 4 cups water. Bring to a boil, then reduce heat to low, cover, and simmer until the meat is tender, about 30 minutes.

Turn off the heat. Add 4 oz curry roux cubes, broken into pieces, and stir until completely melted and the sauce is thick and smooth.

Simmer gently over low heat for 5 minutes, stirring often, until the sauce coats the back of a spoon. Serve hot over 4 cups cooked rice.
