Ingredients

  • 1.5 cups basmati rice
  • 1.5 tsp cumin seeds
  • 2 tbsp ghee or coconut oil
  • 2 whole bay leaves
  • 3 cups water
  • ½ tsp salt

Instructions

    Rinse basmati rice in a fine-mesh sieve under cold water until water runs clear, shaking gently.

    Heat ghee in a medium pot over medium-high heat until shimmering, about 60 seconds.

    Add cumin seeds and bay leaves; stir until seeds crackle and darken slightly, about 30 seconds.

    Pour in rinsed rice and stir constantly until it turns translucent at the edges, about 2 minutes.

    Add water and salt; bring to a boil, then reduce heat to low, cover, and simmer for 12 minutes.
