Ingredients

  • 1 large (about 12 oz) cucumber, halved lengthwise and sliced into half-moons
  • 3 medium (about 1 lb) tomatoes, cut into bite-sized chunks
  • 1 large (about 6 oz) avocado, halved, pitted, and cubed
  • ¼ medium red onion, thinly sliced
  • 1 whole lemon (juiced)
  • 3 tbsp olive oil

Instructions

    Combine cucumber, tomato, avocado, and red onion in a large bowl.
