Ingredients

  • 2 cups cooked quinoa, cooled
  • 1 large cucumber
  • ½ cup fresh mint and parsley, chopped
  • 1 whole lemon (juiced)
  • 3 tbsp olive oil
  • 0 salt and pepper to taste

    Slice cucumber lengthwise in half, scoop out seeds with a spoon, then cut into 1/4-inch half-moons.
