Chickpea Salad with Lemon Dressing

Ingredients

  • 1.5 cans (15 oz each) canned chickpeas, drained and rinsed
  • 1 medium cucumber, diced
  • 1.5 cups cherry tomatoes, halved
  • ¼ cup red onion, thinly sliced
  • 1 large lemon, juiced
  • 3 tbsp olive oil

Instructions

    Rinse and drain chickpeas, then add to a large bowl.

    Dice cucumber into 1/2-inch chunks and add to the bowl.

    Halve cherry tomatoes and add. Thinly slice red onion and add.

    Squeeze lemon juice over the salad. Drizzle with olive oil.

    Add a pinch of salt and pepper. Toss until everything is coated.

    Serve immediately or chill up to 2 days.
