Ingredients

  • 1 lb large shrimp, peeled and deveined
  • 1 can (14.5 oz) canned diced tomatoes
  • 1 whole habanero pepper, whole
  • 4 cloves garlic cloves, minced
  • ½ tsp ground cumin
  • 1 tbsp white vinegar
  • 2 tbsp olive oil

Instructions

    Heat oil in a large skillet over medium-high until it shimmers, about 90 seconds.

    Add minced garlic and sauté for 30 seconds until fragrant, stirring constantly.

    Pour in diced tomatoes with juice, add whole habanero and cumin, stir to combine.

    Simmer for 4 minutes, then remove and discard the habanero (or leave in for more heat).

    Add shrimp and vinegar, stir gently until shrimp curl and turn opaque, about 3–4 minutes.
