Ingredients

  • 1.5 lbs pork belly, cut into 1-inch cubes
  • 1 medium yellow onion, thinly sliced
  • ¼ cup white vinegar
  • 1 whole lime (juiced) + zest
  • 2 whole avocado, sliced
  • 2 cups tomato, diced + fresh cilantro + jalapeño, minced (pico de gallo)

Instructions

    Toss onion slices with vinegar, lime juice, and a pinch of salt. Set aside to pickle while you cook.

    Heat oil in a large skillet over medium-high until it shimmers, about 90 seconds.

    Add pork cubes in a single layer. Don't stir — let them sear 3–4 minutes until edges turn golden brown.
