Ingredients

  • 1 loaf baguette
  • 4 oz goat cheese
  • 1 medium red onion
  • 2 oz blue cheese
  • 2 tbsp olive oil
  • 1 tbsp honey

Instructions

    Preheat your oven to 400°F. Slice the 1 baguette into 1/2-inch rounds and arrange them on a baking sheet. Brush the tops with 1 tbsp of the olive oil.

    Toast the bread in the oven for 5-7 minutes, until golden and crisp at the edges. Meanwhile, thinly slice the 1 red onion.

    In a small skillet, heat the remaining 1 tbsp olive oil over medium heat. Add the sliced onion and cook, stirring occasionally, until soft and caramelized, about 8-10 minutes.

    Spread the 4 oz goat cheese onto the warm toasts. Top each with a spoonful of the caramelized onions.

    Crumble the 2 oz blue cheese over the tops and drizzle with the 1 tbsp honey. Serve warm or at room temperature.
