Ingredients

  • 1.5 lbs zucchini
  • 1.5 cups gruyère or emmental cheese, shredded
  • ½ cup panko breadcrumbs
  • ½ cup crème fraîche or sour cream
  • 2 medium shallots, minced
  • 4 tbsp butter, divided

    Preheat oven to 425°F. Slice zucchini into 1/8-inch rounds using a mandoline or sharp knife.

    Melt 2 tbsp butter in a skillet over medium heat. Sauté shallots until soft and fragrant, about 2 minutes.

    Add zucchini to the skillet and cook, tossing gently, for 3 minutes until just softened.

    Stir in crème fraîche, 1 cup cheese, salt, and pepper. Transfer to a baking dish and spread evenly.

    Toss panko with 2 tbsp melted butter and remaining 0.5 cup cheese. Scatter over the top.
