Ingredients

  • 3 cups fresh corn kernels (or thawed frozen)
  • 1 cup roasted red peppers (jarred, drained)
  • ¾ cup whole milk
  • 1.5 cups sharp white cheddar or provolone, shredded
  • 3 tbsp butter
  • 2 tbsp all-purpose flour
  • ½ medium onion, finely diced
  • 2 tbsp fresh basil (optional, chopped)

Instructions

    Preheat the oven to 400°F. Melt butter in a 10-inch cast iron skillet over medium heat.

    Add diced onion and cook until softened, about 3 minutes. Sprinkle flour over the top and stir for 1 minute.

    Pour in milk slowly while stirring to avoid lumps. Cook for 2 minutes until the sauce thickens slightly.

    Remove from heat. Stir in cheese, corn, and roasted peppers until fully combined and cheese melts.

    Season with salt and pepper to taste. Pour the mixture back into the skillet and smooth the top.
