Ingredients
- 3 cups fresh corn kernels (or thawed frozen)
- 1 cup roasted red peppers (jarred, drained)
- ¾ cup whole milk
- 1.5 cups sharp white cheddar or provolone, shredded
- 3 tbsp butter
- 2 tbsp all-purpose flour
- ½ medium onion, finely diced
- 2 tbsp fresh basil (optional, chopped)
