Ingredients
- 4 whole corn tortillas, 6-inch diameter
- ¾ cup refried beans
- 1 cup shredded Oaxaca or mozzarella cheese
- 3 tbsp olive oil
- 1 medium fresh tomato, diced
- ¼ medium white onion, thinly sliced
- 1 pinch salt and black pepper to taste

Heat oven to 400°F. Line a sheet pan with parchment paper.

Brush both sides of each tortilla lightly with olive oil. Arrange on the sheet pan.

Bake tortillas 5–6 minutes until they start to turn golden and crisp at edges.

Remove pan from oven. Spread 3 tablespoons refried beans on each tortilla.

Top each with 1/4 cup cheese. Return to oven for 4–5 minutes until cheese melts.

Top tlayudas with diced tomato, sliced onion, salt, and pepper. Serve hot.
