Ingredients
- 8 count corn tortillas
- 1 lb ground beef
- 1 medium onion
- 1 medium green bell pepper
- 1 cup shredded cheddar cheese
- 3 tbsp vegetable oil
- 1 tsp chili powder
- 1 tsp salt

Heat 1 tbsp vegetable oil in a skillet over medium heat. Add 1 diced onion and 1 diced green pepper; cook until soft, about 5 minutes.

Add 1 lb ground beef and 1 tsp salt; cook, breaking up meat, until browned, about 8 minutes. Stir in 1 tsp chili powder and remove from heat.

Warm 8 corn tortillas in a dry skillet or microwave until pliable. Fill each with beef mixture and 2 tbsp shredded cheddar cheese; fold in half.

Heat remaining 2 tbsp oil in a large skillet over medium-high. Cook tacos in batches, 2-3 minutes per side, until golden and crispy.
