Ingredients
- 1 lb mixed seafood (shrimp, squid, firm white fish), cut into bite-sized pieces
- ¾ cup all-purpose flour
- 3 cups neutral cooking oil
- 2 whole lemon or lime (juiced)
- 2 whole garlic clove, minced
- 2 cups romaine lettuce, chopped
- 1 pinch salt and pepper to taste
Instructions
- 1
Pat seafood dry with paper towels. Season with salt and pepper, then coat lightly in flour.
- 2
Heat oil in a deep skillet or Dutch oven to 350°F. Test with a pinch of flour—it should sizzle instantly.
- 3
Working in batches, fry seafood 2–3 minutes until golden brown and crispy outside. Don't crowd the pan.
- 4
Transfer fried seafood to a paper-towel-lined plate. Whisk lemon juice, minced garlic, salt, and 2 tbsp of the frying oil in a small bowl.
- 5
Spread chopped lettuce on a platter. Pile fried seafood on top and drizzle with the lime-garlic sauce.
