Ingredients

  • ⅓ cup pork lard (or bacon fat)
  • 8 oz bread (rye or white, 1-day-old works best)
  • 1 medium yellow onion
  • 2 whole garlic cloves
  • 2 tbsp fresh parsley (or caraway seeds, optional)
  • 1 pinch salt and pepper

Instructions

    Cut bread into 3/4-inch cubes. Thinly slice the onion and mince the garlic.

    Heat lard in a large skillet over medium-high until shimmering, about 90 seconds.

    Add bread cubes and toast without stirring for 2 minutes until golden on the bottom.

    Stir cubes, then cook 2 more minutes until edges are deep golden and crispy throughout.

    Push cubes to the side, add onion and garlic to the cleared space, sauté 2 minutes until fragrant and onion softens.

    Toss everything together, season with salt and pepper, scatter parsley on top, and serve hot.
