Crispy Sara Udon with Shrimp

Ingredients
- 8 oz fresh ramen noodles (or crispy chow mein)
- 8 oz shrimp, peeled and deveined
- 3 tbsp soy sauce
- 1 tbsp mirin (or honey)
- 3 tbsp vegetable oil
- 2 stalks green onions, thinly sliced
- ½ tbsp sesame seeds (for garnish)

Boil ramen noodles in salted water for 3 minutes. Drain and set aside.

Stir together soy sauce and mirin in a small bowl.

Heat 1.5 tbsp oil in a large skillet over medium-high until shimmering.

Add noodles in a loose nest. Fry 4–5 minutes without stirring until bottom is golden and crispy.

Flip noodles and fry the other side 3–4 minutes until crispy all over. Transfer to a plate.

Add remaining 1.5 tbsp oil to the skillet. Sauté shrimp until pink, 3–4 minutes.

Pour soy-mirin sauce into the skillet and toss shrimp to coat, 30 seconds.

Place crispy noodles on plates. Top with shrimp and sauce. Garnish with green onion and sesame seeds.
