Ingredients
- 1 lb large shrimp, peeled and deveined
- ½ cup cornstarch
- 4 cloves garlic, minced
- 2 whole dried red chili, sliced (or chili flakes)
- 2 stalks scallions, sliced into 1-inch pieces
- 3 tbsp neutral oil for frying

Pat shrimp dry with paper towels. Toss with cornstarch, salt, and pepper until evenly coated.

Heat oil in a large skillet over medium-high until it shimmers, about 90 seconds.

Add shrimp in a single layer and fry 2–3 minutes per side without stirring until golden and crispy.

Push shrimp to the side. Add garlic and dried chili to the oil, stirring constantly for 30 seconds until fragrant.

Toss shrimp with the garlic-chili oil and scallions. Taste and adjust salt and pepper.
