Ingredients
- 2 medium green plantains
- 1 cup shredded pork (rotisserie or pulled)
- ¾ cup shredded white cheddar or queso de freír
- 2 cups neutral cooking oil (for frying)
- ½ whole lime
- 1 pinch salt and black pepper

Peel green plantains, cut into 2-inch thick rounds. Heat oil in a deep skillet to 350°F.

Fry plantain rounds 2 minutes per side until pale golden. Remove and rest on a paper towel.

Once cool enough to handle, press each round gently between two spoons to flatten into a cup shape.
