Ingredients

  • 2 medium green plantains
  • 1 cup shredded pork (rotisserie or pulled)
  • ¾ cup shredded white cheddar or queso de freír
  • 2 cups neutral cooking oil (for frying)
  • ½ whole lime
  • 1 pinch salt and black pepper

Instructions

    Peel green plantains, cut into 2-inch thick rounds. Heat oil in a deep skillet to 350°F.

    Fry plantain rounds 2 minutes per side until pale golden. Remove and rest on a paper towel.

    Once cool enough to handle, press each round gently between two spoons to flatten into a cup shape.

    Return plantain cups to hot oil for 90 seconds per side until deep golden. Drain well.
