Ingredients

  • 2 medium green plantains, peeled
  • 1 cup shredded pork (rotisserie or cooked)
  • 3 cloves garlic, minced
  • 2 tbsp lime juice
  • 1.5 cups neutral cooking oil for frying
  • 1 pinch salt and black pepper to taste

Instructions

  1. 1

Cut plantains into 2-inch rounds. Heat oil in a deep skillet over medium-high until it shimmers, ~2 minutes.

  2. 2

Fry plantain rounds 2–3 minutes per side until light gold. Drain on paper towels.

  3. 3

Press each warm round flat with a cup to form a shallow bowl shape. Fry again 1–2 minutes until edges curl and deepen to golden brown.

  4. 4

Toss shredded pork with garlic, lime juice, salt, and pepper. Warm briefly in a dry pan or use at room temperature.

  5. 5

Spoon pork mixture into crispy plantain cups. Serve immediately while cups are still warm and crispy.
