Ingredients
- 1 lb pork shoulder, boneless, cut into 1.5-inch chunks
- 1 lb russet potatoes
- 8 oz elbow pasta
- 1.5 cups sharp cheddar cheese, shredded
- ½ cup whole milk
- ¼ cup all-purpose flour

Cut potatoes into thin sticks. Pat pork dry with paper towels and season generously with salt and pepper.

Heat 0.5 inch neutral oil in a heavy skillet over medium-high until a wooden spoon handle bubbles vigorously when dipped.

Toss pork pieces in flour to coat lightly. Working in two batches, fry until golden brown on all sides, about 4 minutes per batch.

Drain pork on paper towels. Pour out oil, leaving 2 tbsp in the skillet. Fry potatoes in batches until golden and crispy, 6-8 minutes total.

While pork and fries cook, boil pasta in salted water until al dente, then drain. Warm milk with butter in a small pot, whisk in cheese until melted.

Toss drained pasta with cheese sauce. Serve pork, fries, and mac and cheese together on one plate with salt and hot sauce on the side.
