Ingredients

- ¾ cup cornmeal
- ¼ cup all-purpose flour
- ½ tsp cayenne pepper
- 1 tsp paprika
- 2 cups neutral oil for frying

Mix cornmeal, flour, cayenne, paprika, and 1 tsp salt in a shallow bowl.

Heat oil in a heavy skillet to 350°F (test by dropping a pinch of flour—it should sizzle immediately).
