Ingredients

  • 1 lb chicken gizzards, cleaned
  • ¾ cup cornmeal
  • ¼ cup all-purpose flour
  • ½ tsp cayenne pepper
  • 1 tsp paprika
  • 2 cups neutral oil for frying

    Pat gizzards dry with paper towels. Season inside and out with salt and black pepper.

    Mix cornmeal, flour, cayenne, paprika, and 1 tsp salt in a shallow bowl.

    Heat oil in a heavy skillet to 350°F (test by dropping a pinch of flour—it should sizzle immediately).

    Dredge gizzards in cornmeal mixture, shaking off excess, then slide into hot oil in batches.

    Fry 6–8 minutes until golden brown and crispy all over, turning halfway through with tongs.
