Ingredients

  • 1.5 lb pork belly, skin-on
  • 3 tbsp red chili paste (sambal or harissa)
  • ¾ tsp turmeric powder
  • 1 whole lime
  • 2 whole shallots, sliced thin
  • 1 tbsp ginger, minced
  • 2 tbsp neutral oil

Instructions

    Cut pork belly into 2-inch chunks. Season generously with salt and pepper.

    Heat oil in a 12-inch skillet over medium-high until shimmering. Add pork skin-side down.

    Sear pork 5 minutes without moving until skin blisters and crisps. Flip; cook 4 minutes more.
