Ingredients

  • 1 lb rotisserie pork, shredded
  • 1 can (15 oz) refried beans
  • 2 medium tomatoes, diced
  • ¼ cup red onion, minced
  • ¼ cup fresh cilantro, chopped
  • 8 count flour tortillas

Instructions

    Combine diced tomatoes, minced onion, and cilantro in a bowl with salt and a squeeze of lime juice.

    Heat oil in a large skillet over medium-high heat until it shimmers, about 90 seconds.

    Add shredded pork and cook without stirring until the edges turn crispy and golden, 4–5 minutes.

    Stir the pork once, then cook another 2 minutes until most pieces have a crispy crust.

    Warm the refried beans in a small pot or microwave, stirring occasionally, until heated through.
