Ingredients
- 1.2 lbs pork belly, skin-on, 1-inch thick
- 3 tbsp soy sauce
- 1 tbsp fresh ginger, grated
- 1 tbsp rice vinegar
- ½ tbsp granulated sugar
- 2 whole scallions, chopped

Pat pork belly dry with paper towels, rubbing the skin vigorously. Season both sides with salt and pepper.

Heat a 12-inch heavy skillet over medium-high heat until smoking, about 2 minutes.

Place pork skin-side down in the skillet. Press gently and sear without moving for 5 minutes until skin crackles and turns golden.

Flip and sear the meat side for 2 minutes, then pour off most fat, leaving about 1 tbsp in the pan.

Mix soy sauce, ginger, vinegar, and sugar in a small bowl. Pour into the skillet and coat the pork for 1 minute until glossy.

Slice pork against the grain into 0.5-inch strips. Drizzle with pan glaze and scatter scallions over the top.
