Crispy Pineapple Fried Rice

Ingredients

  • 3 cups cooked rice, chilled or room temperature
  • 1.5 cups rotisserie chicken, shredded
  • ½ cup frozen shrimp, thawed and patted dry
  • 1 cup fresh pineapple, cut into 0.5-inch chunks
  • 3 tbsp soy sauce
  • 2 tsp sesame oil
  • ½ cup scallions, chopped
  • ¼ cup roasted peanuts, crushed

Instructions

    Heat 2 tbsp neutral oil in a 12-inch skillet over high heat until it shimmers, ~90 seconds.

    Add shrimp and cook 2–3 minutes without stirring until bottoms turn pink, then stir and remove to a plate.

    Add rice to the same skillet, breaking up any clumps, and stir constantly until edges curl and surface looks dry, ~3 minutes.

    Pour soy sauce and sesame oil over the rice, add chicken and pineapple, and toss until everything is hot and coated, ~2 minutes.

    Return shrimp to the skillet and toss once to combine.

    Serve in bowls topped with scallions and crushed peanuts.
