Ingredients
- 3 cups cooked rice, chilled or room temperature
- 1.5 cups rotisserie chicken, shredded
- ½ cup frozen shrimp, thawed and patted dry
- 1 cup fresh pineapple, cut into 0.5-inch chunks
- 3 tbsp soy sauce
- 2 tsp sesame oil
- ½ cup scallions, chopped
- ¼ cup roasted peanuts, crushed

Heat 2 tbsp neutral oil in a 12-inch skillet over high heat until it shimmers, ~90 seconds.

Add shrimp and cook 2–3 minutes without stirring until bottoms turn pink, then stir and remove to a plate.

Add rice to the same skillet, breaking up any clumps, and stir constantly until edges curl and surface looks dry, ~3 minutes.

Pour soy sauce and sesame oil over the rice, add chicken and pineapple, and toss until everything is hot and coated, ~2 minutes.
