  • 1 large bell pepper (any color), cut into 1/2-inch rings
  • ½ medium onion, sliced thin
  • 4 whole egg
  • 2 tbsp milk

Instructions

    Heat oil in a large skillet over medium-high until shimmering, about 1 minute.

    Add onion slices and cook, stirring, until soft and golden, about 4 minutes.

    Arrange pepper rings flat in the skillet, spacing them 2 inches apart.

    Sear pepper rings 2 minutes on each side until edges blister and char slightly.

    Crack one egg into each pepper ring, drizzle with milk, then cover and cook until whites set, about 3 minutes.
