Ingredients

  • 12 pieces wonton wrappers or spring roll wrappers
  • ¾ cup frozen sweet corn, thawed and drained
  • ¾ cup sharp cheddar cheese, shredded
  • ½ cup bacon bits (or 4 slices bacon, crisped and crumbled)
  • 3 tbsp cream cheese, softened
  • 2 tbsp fresh cilantro or scallion, chopped (optional)
  • 3 cups neutral cooking oil for frying
  • 0 to taste salt and black pepper to taste

Instructions

    Mix corn, cheddar, bacon bits, and cream cheese in a bowl until combined. Season with salt and pepper.

    Lay out one wrapper. Place 1 tbsp filling in the center, then fold corners to the middle and seal with water.

    Repeat with remaining wrappers and filling until all 12 pastels are assembled.

    Heat oil to 350°F in a deep skillet or pot. Oil should shimmer and a tiny piece of wrapper should sizzle immediately.

    Fry pastels in batches, 2 minutes per side, until deep golden brown and crispy. Don't crowd the pan.

    Transfer to a paper towel-lined plate. Sprinkle cilantro if desired. Serve hot.
