Ingredients

  • 2 cups all-purpose flour
  • ¾ cup water
  • 1 cup mozzarella cheese, shredded
  • ½ cup green onion or fresh parsley, finely chopped
  • 2 cups neutral oil for frying
  • 1 pinch salt and black pepper to taste
  • 1 whole lime wedge for serving

Instructions

    Mix flour, water, and a pinch of salt until a soft dough forms. Knead briefly until smooth, about 2 minutes.

    Divide dough into 8 balls. Roll each into a thin 4-inch circle on a floured surface.

    Toss mozzarella with green onion, salt, and black pepper. Spoon 2 tbsp filling onto one half of each circle.

    Fold dough in half to form a half-moon. Press edges firmly with a fork to seal.

    Heat oil in a deep skillet to 350°F. Fry pastels 90 seconds per side until deep golden and edges curl.
