Ingredients

  • 3 medium yellow onions, thinly sliced
  • ¾ cup all-purpose flour
  • 1 tsp garam masala
  • 1 piece green chili, minced (or 1/2 tsp chili powder)
  • 2 cups vegetable oil for frying
  • ¼ cup fresh mint, chopped
  • ½ cup plain yogurt

Instructions

    Toss sliced onions with flour, garam masala, green chili, salt, and 3 tbsp water until evenly coated.

    Heat oil in a deep skillet over medium-high until a piece of onion sizzles immediately when dropped in.

    Working in two batches, carefully slide onion mixture into hot oil; fry 3–4 minutes until deep golden brown.

    Use a slotted spoon to lift bhaji onto a paper-towel-lined plate; sprinkle with salt while still hot.

    Stir chopped mint into yogurt with a pinch of salt and cumin; serve alongside bhaji for dipping.
