Ingredients
- 3 medium yellow onions, thinly sliced
- ¾ cup all-purpose flour
- 1 tsp garam masala
- 1 piece green chili, minced (or 1/2 tsp chili powder)
- 2 cups vegetable oil for frying
- ¼ cup fresh mint, chopped
- ½ cup plain yogurt

Toss sliced onions with flour, garam masala, green chili, salt, and 3 tbsp water until evenly coated.

Heat oil in a deep skillet over medium-high until a piece of onion sizzles immediately when dropped in.

Working in two batches, carefully slide onion mixture into hot oil; fry 3–4 minutes until deep golden brown.

Use a slotted spoon to lift bhaji onto a paper-towel-lined plate; sprinkle with salt while still hot.
