Ingredients

  • 2 whole large yellow onions
  • ¾ cup chickpea flour (besan)
  • 2 tbsp tamarind paste
  • 1 whole green chili, minced
  • ¼ cup fresh cilantro, chopped
  • 1.5 cup neutral oil for frying

Instructions

    Slice onions into thin half-moons and toss with chickpea flour, salt, green chili, and cilantro until evenly coated.

    Heat oil in a deep skillet to 350°F (a pinch of flour should sizzle immediately upon contact).

    Working in batches, slide spoonfuls of the onion mixture into hot oil and fry until deep golden brown, 2–3 minutes.

    Remove bhaji with a slotted spoon and drain on paper towels. Season with salt while still hot.

    Whisk tamarind paste with 2 tbsp water and a pinch of salt to make a quick chutney.
