Ingredients
- 2 whole large yellow onions
- ¾ cup chickpea flour (besan)
- 2 tbsp tamarind paste
- 1 whole green chili, minced
- ¼ cup fresh cilantro, chopped
- 1.5 cup neutral oil for frying

Slice onions into thin half-moons and toss with chickpea flour, salt, green chili, and cilantro until evenly coated.

Heat oil in a deep skillet to 350°F (a pinch of flour should sizzle immediately upon contact).

Working in batches, slide spoonfuls of the onion mixture into hot oil and fry until deep golden brown, 2–3 minutes.
