Ingredients
- ½ lb small squid or baby squid, cleaned and cut into rings
- ½ lb small white fish or smelt (fresh anchovies work too)
- ½ cup all-purpose flour
- 2 cups neutral oil for frying (vegetable or canola)
- 1 whole lemon
- ¼ cup fresh parsley, chopped
- 1 tsp sea salt flakes

Pat squid and fish dry with paper towels. Season generously with salt and pepper.

Pour flour into a shallow bowl. Toss squid and fish in flour until evenly coated, shaking off excess.

Heat oil in a heavy skillet to 350°F, about 3 minutes. Oil should shimmer and ripple.

Working in batches, slide seafood into hot oil and fry until golden and crispy, 2–3 minutes per batch.

Transfer fried seafood to a paper-towel-lined plate to drain.

Toss warm seafood with chopped parsley, sea salt, and a squeeze of fresh lemon. Serve immediately.
