Ingredients

  • ½ lb small squid or baby squid, cleaned and cut into rings
  • ½ lb small white fish or smelt (fresh anchovies work too)
  • ½ cup all-purpose flour
  • 2 cups neutral oil for frying (vegetable or canola)
  • 1 whole lemon
  • ¼ cup fresh parsley, chopped
  • 1 tsp sea salt flakes

Instructions

  1. 1

Pat squid and fish dry with paper towels. Season generously with salt and pepper.

  2. 2

Pour flour into a shallow bowl. Toss squid and fish in flour until evenly coated, shaking off excess.

  3. 3

Heat oil in a heavy skillet to 350°F, about 3 minutes. Oil should shimmer and ripple.

  4. 4

Working in batches, slide seafood into hot oil and fry until golden and crispy, 2–3 minutes per batch.

  5. 5

Transfer fried seafood to a paper-towel-lined plate to drain.

  6. 6

Toss warm seafood with chopped parsley, sea salt, and a squeeze of fresh lemon. Serve immediately.

Tools you’ll need

  • heavy skillet or deep frying pan (10–12 inch)
