Ingredients

  • 1 cup gram flour (besan)
  • ½ medium onion, finely diced
  • ¼ cup fresh cilantro and mint, chopped
  • 1 piece green chili, minced
  • 1 tsp cumin seeds
  • ½ tsp turmeric powder
  • ½ cup water
  • 3 tbsp neutral oil for cooking

Instructions

    Mix gram flour, onion, cilantro, mint, green chili, cumin, turmeric, and 1 tsp salt in a bowl.

    Add water slowly, stirring until a thick, workable dough forms — no lumps, not too wet.

    Divide dough into 4 equal balls. On an oiled surface, flatten each into a thin disc, ~7 inches across.

    Heat 1.5 tbsp oil in a 10-inch skillet over medium-high until it shimmers, about 90 seconds.

    Slide one roti onto the skillet and cook for 3–4 minutes until the bottom is deep golden and crispy.

    Flip, cook the other side another 2–3 minutes until edges curl slightly and it snaps when bent. Transfer to a plate.
