Ingredients

  • 4 nests store-bought meringue nests
  • 1 cup heavy whipping cream
  • 2 tbsp powdered sugar
  • 2 cups fresh mixed berries (blueberries, raspberries, strawberries)
  • ¾ cup cherry jam or canned cherry compote
  • 1 tbsp lemon juice
  • ½ tsp vanilla extract
  • 8 leaves fresh mint leaves (optional garnish)

Instructions

  1. 1

Pour cherry jam into a small saucepan over medium heat. Stir in lemon juice and warm for 2–3 minutes until pourable. Set aside.

  2. 2

Pour heavy cream into a bowl. Add powdered sugar and vanilla. Whip with an electric mixer or whisk until soft peaks form, 2–3 minutes.

  3. 3

Divide whipped cream evenly among the four meringue nests, dolloping gently into the center of each.

  4. 4

Top each nest with a generous handful of fresh mixed berries, distributing them across the whipped cream.

  5. 5

Drizzle warm cherry compote over the berries and whipped cream. Garnish with a mint leaf if desired.

  6. 6

Serve immediately while meringue is crisp and compote is still warm.
