Ingredients

  • 1 cup all-purpose flour
  • ¾ cup milk
  • 1 whole egg
  • 3 tbsp butter, melted
  • ½ cup chocolate chips or chopped dark chocolate
  • ½ cup roasted peanuts, crushed
  • ¼ cup granulated sugar (for filling + topping)

Instructions

    Whisk flour, milk, egg, and 2 tbsp melted butter in a bowl until smooth, about 1 minute.

    Heat 1 tbsp butter in a 10-inch nonstick skillet over medium until edges shimmer, ~90 seconds.

    Pour half the batter into the skillet, tilting to spread thin. Let cook until the top looks dry, ~3 minutes.

    Scatter half the chocolate, crushed peanuts, and 2 tbsp sugar over one half of the pancake.

    Fold the pancake in half. Cook for 1 minute until the underside is golden and crisp, then slide onto a plate.

    Repeat with remaining batter, filling, and butter. Serve warm.
