Ingredients

  • 1.5 cups all-purpose flour
  • 2 whole eggs
  • ¾ cup milk
  • ⅓ cup condensed milk
  • ½ cup unsalted butter, divided
  • ¾ cup brown sugar
  • ¾ cup roasted peanuts, coarsely chopped
  • ½ cup chocolate sprinkles or chopped chocolate
  • ¼ tsp salt

Instructions

    Whisk flour, salt, eggs, milk, and condensed milk until smooth, ~1 minute.

    Let batter rest at room temperature for 15 minutes to hydrate.

    Mix brown sugar and chopped peanuts in a small bowl.

    Heat 1 tbsp butter in a 10-inch nonstick skillet over medium heat until foaming.

    Pour 1/2 cup batter into the pan, tilting to spread into a thin, even layer.

    Cook until the bottom is light golden and edges lift easily, ~2 minutes.

    Scatter 2–3 tbsp peanut-sugar mix and 1–2 tbsp chocolate across one half.

    Fold the unfilled half over the filling and press gently to seal.

    Cook until the folded pancake is deep golden, ~1 minute per side, pressing lightly.

    Slide onto a plate and repeat with remaining batter and filling.

    Serve warm, whole or cut into quarters for sharing.
