Ingredients

  • 2 pcs (about 6 oz each) chicken breast, boneless skinless
  • ½ cup all-purpose flour
  • 1 large eggs
  • ¾ cup panko breadcrumbs
  • 8 oz (about 2 cups) frozen french fries
  • 1 whole lemon

Instructions

    Preheat oven to 400°F. Spread frozen fries on a baking sheet, season with salt and pepper, then bake according to package directions.

    Place chicken between two sheets of plastic wrap. Pound with a meat mallet or rolling pin until about 1/4-inch thick.

    Set up three shallow bowls: flour in first, beaten egg in second, panko mixed with salt and pepper in third.

    Coat each chicken breast in flour, shaking off excess, then dip in egg, then press into panko until fully coated on both sides.

    Heat oil in a large skillet over medium-high until it shimmers, about 60 seconds. Slide in chicken and sear 3-4 minutes per side until golden brown and edges curl.
