Ingredients

  • ¾ lb cod fillets, skinless
  • ½ cup all-purpose flour
  • ½ lb frozen french fries
  • 2 cups green cabbage, finely shredded
  • 2 cups neutral oil (for frying)
  • ⅓ cup sweet chili sauce

Instructions

    Pat cod dry with paper towels. Cut into 2-inch pieces. Season generously with salt and black pepper.

    Heat oil in a large heavy skillet to 350°F over medium-high heat, about 4 minutes. Test with a cube of bread — it should sizzle instantly.

    Toss cod pieces in flour until coated. Shake off excess. Carefully lower into hot oil in batches; do not overcrowd.

    Fry until golden and crispy, turning once, about 4–5 minutes total. Transfer to a paper-towel-lined plate. Sprinkle with salt immediately.

    Meanwhile, bake frozen fries in a separate oven at 400°F for 12 minutes, or pan-fry in the skillet (in batches) until golden, 8 minutes.

    Toss shredded cabbage with a pinch of salt and 2 tbsp chili sauce. Serve kibbeling, fries, slaw, and remaining chili sauce alongside.
